Uniting performance (Hendrik Schneider), poetry (Hanne\u00a0Lippard) and painting (Ivo Gretener) among other media, the exhibition featured\u00a0a dinner performance \u2018I Promise\u2019 as constitutive element. 25\u00a0excited dinner guests\u00a0\u2013 mainly artists, curators and their friends \u2013 gathered around a large,\u00a0white-tiled table at NR-Projects. \u2018I was sceptical at first, when Hendrik and\u00a0Mark (Pennock, initiator of the Bon Bock\u00a0culinary residency) approached me with\u00a0the idea of a dinner performance.\u2019, Holten said. \u2018But it turned out really\u00a0well, and was an integral part of the exhibition. I was surprised at the amount of\u00a0cross-over between\u00a0the exhibition and the dinner.\u2019<\/p>\n<p>Separated by a large table piled high with\u00a0homemade bread, the chefs Natasja Loutchko and Felix Br\u00f6ckner toiled in the\u00a0open kitchen, stirring soups, garnishing scallops and braising ox cheeks. The\u00a0four-course\u00a0dinner focussed on ingredients that were used as commodities for\u00a0trade: the first course, an almond, garlic and parsnip soup emphasised the use\u00a0of salt and almonds, both commodities that have been traded\u00a0since ancient\u00a0times.\u00a0\u00a0Other ingredients included\u00a0chocolate, tobacco (combined as tobacco-infused mousse) and cattle \u2013\u00a0long-established signifiers of status and wealth. The menu also featured Amalfi\u00a0lemons\u00a0and scallops \u2013 contemporary takes on old-world aspirational consumption. \u00a0<\/p>\n<p class=\"size--small\"><img decoding=\"async\" class=\"size-full wp-image-19885\" alt=\"Photo copyright Alexander Coggin\" src=\"https:\/\/www.sleek-mag.com\/wp-content\/uploads\/2015\/03\/027AlexanderCogginNRprojectsIpromise.jpg\" width=\"716\" height=\"458\" \/> Photo copyright Alexander Coggin<\/p>\n<p>Integral to both the meal and the\u00a0exhibition, Hendrik Schneider\u2019s performance took place after the\u00a0first course. Guests had been provided with Exacto knives and cutting mats.\u00a0We\u2019d been told to bring\u00a0two new ten Euro notes, and Schneider guided us in slicing\u00a0off stripes of the notes, two millimetres at a time, passing on our mutilated\u00a0slices to our left-hand neighbour \u2013 thereby \u2018creating\u2019 20 Euros, and doing\u00a0our\u00a0bit for inflation. Schneider challenged us to spend out mutilated notes as part\u00a0of the performance. \u2018Well, I would try in a dark, crowded bar at 4 am,\u2019 the\u00a0artist Hanne Lippard suggested.<\/p>\n<p>Loutchko and Br\u00f6ckner were both trained at the St\u00e4delschule, an art school in Frankfurt that emphasises the connection between art and food. Their collaboration worked\u00a0really well,\u2019 Holten said. \u2018She\u2019s an artist-chef, and Felix is more of a chef-curator\u2019.\u00a0The duo are the current residents in the Bon Bock\u00a0culinary residency.
