It is now a common practice to offer a pairing for each course of a dinner with an appropriate wine choice, with even mid-range\u00a0restaurants offering wine-matching options. Champagne, though, has traditionally been left out of the fray. Berlin-based chef Tim Raue, at a dinner to celebrate the Krug champagne dynasty, however, chose\u00a0to pair his Asian-inspired fusion cuisine with \u00a0champagne, ranging\u00a0from Krug’s Grange Cuv\u00e9es to vintage single estate. Matching a wasabi langoustine and celery, truffle and lettuce roll with Krug\u2019s Grande Cuv\u00e9e ID\u00a0214032, Raue\u00a0played on the zingy, tangy notes of the champagne with the\u00a0sharpness of the wasabi. Prawn cracker flakes complemented the champagne\u2019s\u00a0effervescence.<\/p>\n

The highlight of the dinner was the Hamachi\u00a0ceviche with elderflower and green melon, where a 2003 Clos du Mesnil, a\u00a0champagne from a tiny single estate of Chardonnay grapes provided the\u00a0accompaniment.\u00a0Sous vide Sichuan beef followed, matched by a tart and fruity\u00a02003 vintage. Rounding off the dinner, a nutty Grande Cuv\u00e9e met a beurre sal\u00e9e<\/em>\u00a0sorbet accompanied by mango and passion fruit, and Tim Raue\u00a0handed round large\u00a0bowls of truffles as a coup de grace<\/em>.\u00a0\u00a0As\u00a0Maggie Hernandez, Krug CEO noted, \u201cMatching food to champagne is new: I want\u00a0people to feel comfortable ordering champagne with dinner,\u00a0rejecting the flute\u00a0and embracing this pairing and approach.\u201d<\/p>\n\n
